Craving Lechong Manok & Nilagang Baka + My 2nd Dose of Anti-Rabies Vaccine!

Life can be busy, but I always make time for a little indulgence, comfort food, and keeping up with my health. Let’s dive in!

Midnight Cravings: Lechong Manok to the Rescue!

So, the other night, I woke up at midnight with an intense craving for Lechong Manok (rotisserie chicken). You know those moments when you can’t stop thinking about a certain food? That was me, so I decided to take action and make it happen!

I grabbed a whole chicken, marinated it with a mix of herbs, spices, and some Filipino flavors. Then, I used my trusty air fryer to cook the chicken to crispy perfection. For those who don’t know, rotisserie chicken is made by cooking the chicken using direct heat, often from electric or gas-powered heating elements. The result? A super juicy, tender chicken with crispy skin—just the way I like it! 🍗

The best part? I didn’t have to go out to get it. I could prepare this delicious dish from the comfort of my condo. Honestly, having an air fryer has made cooking so much easier, especially for dishes like Lechong Manok, which I can now make at any time. It’s a total game-changer for me!

Comfort Food to the Rescue: Nilagang Baka

While I was cooking my Lechong Manok, I also had to take care of some health matters. I recently got a little scratch from a street cat (I know, not the best situation 😅), so I had to go get my second dose of the anti-rabies vaccine.

I’ve had this vaccine before, and every time I get a dose, I feel a bit feverish. So, to treat myself, I decided to cook a hearty pot of Nilagang Baka. For those who are not familiar, Nilagang Baka is a Filipino beef soup made with tender beef shank and a variety of vegetables like potatoes, beans, and cabbage. It’s a warm, flavorful dish that feels like a hug in a bowl.

Nilagang Baka is one of my absolute favorite Filipino comfort foods. The tender beef combined with the veggies makes it both delicious and healthy. Plus, it's the perfect food when you're not feeling 100%, which made it the ideal choice since I was dealing with the side effects of the vaccine.

The Perfect Combo: Health, Comfort, and Cravings

It’s amazing how food can bring so much comfort and joy, especially when you’re dealing with health matters like vaccinations. Cooking these dishes not only satisfied my cravings but also made me feel better physically and emotionally.

I truly believe that food is such a big part of my life—it’s a way to treat myself, stay connected to my culture, and find comfort during challenging times. The combination of Lechong Manok and Nilagang Baka made my day, and I couldn’t have asked for better comfort food to enjoy during my recovery.
